Nicholas Repenning is co founder of go-en fermented foods,  a small artisanal fermentory in Whitefield ME.  go-en fermented foods specializes in traditionally fermented Japanese foods and seasonings.  "We have been culturing koji commercially in Maine for the past decade or so and have developed a breadth of experience, fermenting both traditional and nontraditional foods utilizing koji as a catalysts in microbial cooking." go-en strives to enlighten the palates of our customers by sharing the secrets of Japanese food culture and koji based fermentations.
